Clover Hill vintage sparkling is one of those wines that you can enjoy more than one glassful. This wine is deeper in colour with a roundness developed from 3 years on lees and the dosage aged for 1 – 2 years in French oak. The bubbles are fine and persistant and the texture of the mousse is smooth and creamy. This Tassie wine has a distinctive nuance of smokiness coming from the oak that adds to the biscuity peach, apricot and creamy nose. The flavours are also rich almond toast, vanilla, lemon and baked peaches on the lingering finish. This wine has a nice concentration of fruit and weight and will go very well with food.
