Yarra Valley is a great source of Australian cool climate Chardonnay allowing the fruit to ripen to while maintaining a fresh acid structure. These are not the overly ripe tropical fruit, richly oaked chardonnays that bare-it-all from warmer climes that have fallen out of the limelight in the past decade.
The Innocent Bystander is a fleshy Chardonnay. And one where toasted almond and cinnamon spice up the fresh cut pineapple and stonefruit flavours. That almond and spice takes a slightly more oaked turn on the finish. The fruit has been kept bright by partial barrel maturation with an added polish of battonage (lees stirring) but without malolactic fermentation. It is a worthy food wine and will work well with a wide range of flavours from baked fish, roast vegetables through to chicken and pork dishes.
