The Elderflower Fizz Experiment – Day 4

I have foam action! Well, in one pot anyway. So I am feeling that I am half on my way.  In fact, I can hear a very satisfying bubbling coming from the pot that is active. Perhaps I have added too much yeast?

Anyway, I have had a little taste of both mixtures and they still taste sweet, but still more like lemon rather than Elderflower. I am hoping that the fermentation will extract more flavour from the Elderflower.

elder6I have added more yeast to the second pot and after checking it continuously throughout the day, there is action there too. And some more bubbling sounds.  So, I will leave them now for four more days and hope that I do not end up with a cauldron of sourness.

Would really love to have any suggestions as to whether plastic bottles will keep my fizz fresh for 6 months or whether I need to use glass for the bottles I plan to keep after Christmas.
