A light and crisp fizz with lots of it … fizz that is. The cuvee is of 49% Pinot Noir, 43% Chardonnay and the rest is Pinot Meunier (the classic trio of Champagne) and the producers assure us that at least 70% of the fruit was Victorian cool climate. It is just a touch off dry but is well balanced overall with that refreshing acid that good fizz needs and a lingering finish. The characters of pear, citrus and green apples work well with some additional minerality and breadiness on the palate.
