
Who makes it?
Boutari Dianthos Xinomavro Rosé. This is a wine producer with a long family history starting from 1879 in Naoussa, Northern Greece. Over time the family expanded into other Greek wine regions, namely Crete and Santorini. More recently, from 2022, the wine producer has new investor.
Naoussa is a region with a focus on the red grape Xinomavro. It is the only grape permitted in a wine with Naoussa PDO on the label. However, this wine is not Naoussa PDO, because the regulations don’t have a rosé classification.

How do they make it?
This is a 100% Xinomavro rosé wine. While it is classified as a Imathia PDO wine, the grapes grew in Naoussa region. The winemaking team uses a combination of wine making techniques. One portion starts as a red wine, then after a short period the wine ‘bleeds’ off to then continue fermentation separately. This is called the ‘Saignee’ method. The rest receives the typical rose attention where the juice only have a very limited time remaining in contact with the grape skins.
What does it taste like?
This wine is a pale salmon colour. The aromas are redolent of cherries with some tropical notes and a mineral flintiness. It is dry and fuller in body. The acid is refreshing and there is a very light tannin grip. The finish is savoury with fruit and minerality.
It is a fruity fresh pink that works very well with or without food.
What to drink it with?
Enjoy this with prosciutto and charcuterie, quiches, seafood and salmon.
Cheese
Goat’s cheeses are good with this wine, particularly a goat’s cheese rolled in chilli and herbs.
