
Who makes it?
Fantini Calalenta Pecorino is one elegant and crisp white wine from Abruzzo, Italy. Pecorino is a grape with a fascinating history that centres around its revival in the 1980s. It is an indigenous grape variety from the central eastern regions of Italy, particularly from Marche and Abruzzo. Due to it nearly becoming extinct, it is still a relatively uncommon grape.
How do they make it?
The vineyards the Pecorino grows in that makes this wine are around the town of Ortona. Interestingly, these grapes grown on pergolas. Around 80% of the must underwent fermentation in stainless steel to maintain the wine’s fruitiness. That stainless steel ferment was a cool one. As well as this stainless steel ferment, a portion of the wine fermented in a foudre.

What does it taste like?
That time in foudre shines through with some spice and texture. This is a dry white wine that evokes stonefruit and pears with a savoury undertone. It is round in the mouth yet is also bright with a fresh flush of acid.
What to drink it with?
Enjoy this wine with chicken, fish and seafood. A seafood pasta would be delicious.
Cheese
Drink with tangy fresh or semi hard cheeses. It might be obvious, but you could start with Pecorino cheese.
