
All of Mitolo family’s wines are solidly grounded in their Italian heritage and the Jester Cabernet Sauvignon is a great example of this. While it offers up the ripe softness of the Australia’s McLaren Vale region, it has a twist. 20% of the grapes pressed for the Jester have been partially dried using the apassimento method. Notably, this is a method that is more likely to be seen in the Valpolicella region in the plush Amarone wines, than in Australia.
The Mitolo Jester is seriously rich. Its ripe aromas of thyme, cassis and cherries is enriched with spiced chocolate and vanilla. On the palate, these aromas are plumped out further by lush and creamy oak, together with just a few grams of sugar that has been left in the wine. As a result, the Jester is a full bodied, full throttle Cabernet. The type of juicy wine that you can immediately sink into.
