
Who makes it?
Paracombe is the label of the passionate Drogemuller family in the Adelaide Hills sitting high above Adelaide in Australia’s South. It is also the name of the nearby town. Paracombe Wines has a wide range of wine including a wonderfully fragrant white blend based on Gruner Veltliner, Gruner V5, and a straight Pinot Blanc. Pinot Blanc is not your everyday white grape grown in Australia and recently that wine was a finalist in Dan Murphy’s Decoded Wine Awards for 2022.

How do they make it?
This is exactly as it says on the bottle. A blend of three pinot grapes. This time Pinot Gris 50%, Pinot Noir 45% and Pinot Blanc 5% all cool climate Adelaide Hills fruit. To preserve the fruitiness of this fizz, the second ferment was done in tanks before bottling.
What does it taste like?
Soft bubbles make a lively dance across the top of the glass. It is a pretty pale pink salmon hue. This bubbly offers up fresh fruited aromas of roses, raspberries and strawberries. It is medium bodied with impeccable balance along the palate. Satisfyingly, the flavours last lingeringly until the next sip.
What to drink it with?
This is a great wine to enjoy as an aperitif. It needs nothing but a clean glass to make it shine. However, it would be lovely for lunch or a light evening meal with some quiche, or a fresh cheese or ham salad. Some Thai flavours will be a great match too.
