Yalumba Eden Valley Viognier is another part of Viognier story from the Hill-Smith portfolio. The Hill-Smith family are Viognier champions. Yalumba have proven themselves as the Australian specialists of this Condrieu grape. For over 35 years, Robert Hill-Smith and his passionate team have honed their Viognier expertise and have kept their nursery well stocked with new imported clones to trial in their Eden Valley vineyards.

How do they make it?
The Yalumba Eden Valley Viognier has a portion of the wine ferment and mature in older French oak for around 10 months. This gives it some spice that sits very well with the Viognier typical characters. The ferment used native yeasts. It is also certified 'Sustainable Winegrowing Australia'.

What does it taste like?
This dry white wine has a creamy silky texture under the softly refreshing acid. The fragrance of flowers, apricot and white pepper wafts from the glass. It is fuller in body and fleshy in nature. The finish is of ginger, white pepper and stonefruit and lingers for a long time. Don't serve this wine too chilled, around 8-10o C is good. And take it slowly to let it unfurl in the glass.
What to drink with it?
This Viognier has plenty to offer to match with food, even some pork or lamb dishes. Of course, Asian dishes will also be a good match. Salt and pepper squid or tofu with some sweet chilli sauce should be on the menu. Or just some battered fish and chips.
Cheese
Enjoy the Eden Valley Viognier with fresh cheeses, or even a herbed cheese. A goats cheese rolled in herbs is good. Some Pecorino cheese would also be good.
