Who makes it?

Chan de Rosas is a small winery located in Galicia in Spain. Specifically, the Galician region Rias Baixas. They are focused on Albarino. This is unsurprising as Rais Baixas is famed for their Albarino white wines. However, they also produce a dry white wine made with Muscat of Alexandria. Or Moscatel de Ajejandria.

How do they make it?

The Chan de Rosas Cuvee Especial is 100% Albarino grapes. To give this wine a supple silkiness, around 15% has spent around 6 months in new French oak. Just this small portion gives some spiciness as well. Then both the oak and the stainless steel portions are stirred weekly. This process, also known as bâttonage, adds body, complexity and texture. 

What does it taste like?

This is a dry and fresh drinking white wine. It is fuller in body, while still staying elegantly medium bodied. The wine captures the floral heart of Albarino, which supports the citrus and stone fruit ripeness. It has a light creaminess on the nose and on the palate. The lingering note of spiced citrus finishes the mouth full. 

It really is a delicious introduction to Albarino for anyone who has not yet tasted it.

What to drink it with?

A creamy, yet fresh white such as this is a great match for chicken dishes, particularly chicken breast. Especially one with an almond crust or a cheese souffle or roulade.
